Thai curry noodles: Thai curry noodles recipe

 Let’s start with some introduction, I am a foodie as well as food blogger. Last year me and my family went to Thailand. It’s a beautiful place and I was amaze by breathtaking views. We had a great time there, apart from fun and entertainment we enjoyed eating lot’s of delicious dishes in Thailand. One of these delicious dishes was Thai curry noodles. Today in this short article I am going to discuss Thai curry noodles recipe. The procedure to make these noodles is little bit complex but don’t worry and several different ingredients are required to prepare delicious thai curry noodles.

Without wasting time let’s start with list of ingredients required for preparing thai curry noodles.

Now let’s dive into the Thai curry noodles recipe.


Ingredients

  • 250g Rice noodles 
  • 1/2 a red and yellow pepper 
  • 1 Small size onion 
  • 8-9 teaspoons Red curry paste
  • 1/2 teaspoon garlic and ginger paste respectively 
  • Fish sauce around 1 teaspoon 
  • Coconut milk ( 400-500ml )
  • 200ml water
  • Thai basil leaves 2 ( recommended )
  • Lemon juice ( According to taste )
  • At last small cut outs of chicken breasts ( 2 chicken breasts recommended )


Procedure 

First of all take red curry paste and pieces of chicken breasts, and mix them throughly in a bowl or any other utensil after mixing these ingredients put the bowl filled with mixer in refrigerator for 45 minutes ( minimum ) and overnight ( maximum for better results ) for marinating. 

In the second step, boil water in pan and add rice noodles to the boiling water and cook ( follow the instructions given on packet ). 

In the third step, take some oil in frying pan and add marinated chicken to it then cook until it’s 40-50 % cooked after that remove the chicken from pan and put aside and than in the same pan add small pieces of sliced onions and red pepper, fry them throughly.

 

In fourth step, add some curry paste and fry for 1.5 minutes after 1.5 minutes add garlic and ginger paste and fry for some more time after this add fish sauce, coconut milk and water and let them boil.

When these ingredients starts boiling add chicken that was kept aside and allow to boil once again. Then with the help of big spoon stir the sauce ( skim sauce ) until it gets thick. 


In the last step, add noodles, thai basil leaves and lemon juice ( according to taste ) add mix it well.
